From: Jon Guite I wish to make it clear that I take no responsibilty whatsoever for any accidents arising from making this stuff, or any hours lost from the gardening by being forced to retire to the shed in disarray after drinking it, or any memory loss involved. You have been warned. 2 Gallons Nettles 1/2 - 1 oz root ginger (according to your taste) 3lbs Sugar Juice of 2 lemons 2 oz hops 4lb Malt 2 Gallons of water Brewing yeast Proceed as follows:- Fill a large saucepan with the water, and add the nettles, hops, ginger and malt. Bring to the boil and simmer for about half an hour. Put the sugar and lemon juice into your brewing container, and strain the liquid onto it. Stir until the sugar is completely dissolved, and leave to cool, then add the yeast. Ferment until all bubbling has ceased - I've never used less than two weeks, then bottle, adding about 1/4 teaspoon of sugar to each half pint bottle - I seriously recommend half pint bottles. It will be ready to drink about 4 - 6 weeks after bottling. When young it is a light flavoursome beer which gently stings the tongue as it goes down. Keep it for a year or so, and it turns into a dark brown ale which glowers at you from the glass with a sort of "Go on drink me - I dare you" look. The nettles are best picked in April or May, and choose young bright green ones. And the best of sheddist luck! (Is there such a thing?)
